We recently attended the fabulous Cumbria Life Christmas Fair at Rheged and were wowed by local chef, Will Manley’s ‘Ultimate Christmas Stuffing’ demonstration.

We got in touch with The Yan ( at Broadrayne, Grasmere) and asked if Will could share a recipe with our Look & Cover community, is there anything better than a complete PJ day and eating Christmas Day leftovers? We present to you, the Ultimate Boxing Day Bap!

Ultimate Boxing Day Bap

 

Ingredients/ leftovers

Bread bap of choice - our personal favourite is a Lovingly Artisan ciabatta roll

Leftovers: Turkey, ham, gravy, pigs in blankets, stuffing, sprouts, cranberry sauce, bread sauce and 1 x farm egg

Method

Shred the turkey and ham and mix with the cold gravy to bind it. Add to a saucepan and heat.

Finely chop your sprouts, fry off in a frying pan with butter, salt and pepper.

Pop your stuffing and pigs in blankets in the oven to heat through.

Heat up a pan with some oil in. Fry your egg until golden around the edges.

On the bottom half of your bap put your bread sauce, then your ham and turkey mix, followed by a slice of meaty stuffing, your sprouts, pigs in blankets and top with your fried egg and a dollop of cranberry sauce to hold it all together.
